Trish is back with her superfab Pin It and Do It challenge, and I'm SO ONBOARD!!! This challenge was great the last time I participated, and I actually found some new favorite goodies from my stockpile of Pinterest items.
I'm going in at the Pinterested level and anticipating completing 4-7 pins in the month of August.
Ever since I've been doing the single mom thing, I've started taking advantage of my time on weekends-- while Greyson is with his daddio--to cook for the week. Along with cooking for the week has come the desire to cook and freeze. See Trish's awesome post about that today, too. I've been relying heavily on my "To Do Soon!" Pinterest board to give me weekend cooking ideas (and quick fodder for the challenge). In fact, I'll probably knock out at least 3 pins just this weekend! Here's what's cooking...
Yamberry Muffins -- loaded with good stuff, freezable, and easy to thaw on the go for Greyson's and my breakfast.
Greek Yogurt Pancakes -- See above. Easy freezy.
Quinoa Pizza Bites -- I WANT to like quinoa (and I want Greyson to tolerate it), and this might be the ticket.
I'll keep y'all posted on how these recipes pan out as it'll be a first time go-round for all of them. Wish me luck!

Carole, it can be a timesuck, for sure. Luckily, I work in social media, so I have whole days dedicated to Facebooking, Tweeting, and Pinning. Crazy, I know. My eyeballs are feeling the fallout, too. lol
DeleteI must say, the whole pinning thing confuses me a bit. I am waiting for it popularity to fade. Then I won't have to figure it out.
ReplyDeleteIt's kind of like a list of visual bookmarks. Like if you bookmark a page or add it to your favorites. I need the visual representation to go with it to remember what I want to do!

ReplyDeleteLu, without my "To Do Soon" board, I'd never do anything! Seriously. I go through my general boards regularly, pick out the items I legitimately want to do soon and for which I'll have the supplies/ingredients. Helps SO much.
DeleteI was wondering if it was going to be another weekend when I learnt about some new ingredient that we don't have in the shops here! Glad I clicked through to find out what Yamberry might be!
ReplyDeleteMarg, I was wondering that when I saw it! However, in this case the muffins have a cup of cooked sweet potato in them and cranberry sauce. Thus the "yamberry." They turned out great! Very tasty.

ReplyDeleteI hang my head in shame--I haven't had a chance to even look at my pin boards for what I'd like to do. I have a birthday coming up--maybe my birthday gift from hub and elle can be an evening of Trish time? ;)
I must check out these quinoa pizza bites, as quinoa is one of my best friend's favorite grains, and I bet she would be over the moon if I made these for her. Thanks for the inspiration, Andi!

ReplyDeleteWow - yamberry muffins sound great. I never would have thought of taking two of my fave fall foods and making them into breakfast. The problem with the Pin It and Do It challenge is I'm adding more pins than I'm doing!
